All American Spiced Apple Muffins.

Last friday when Melisa and I went on our little thrift outing, I picked up The All American Apple Cook Book at one of our stops. Conveniently I had some super fresh and tasty apples that my husband's boss had given to him from a local orchard. I prefer baking to cooking so I went straight to the pastry section.
I decided to try one of the muffin recipes (mainly because I wanted to use my halloween cupcake papers).




Spiced Apple Muffins:
1/4 cup of shortening
1/2 cup of sugar
1 egg
1/2 cup of milk
1 cup of finely chopped apples
1 1/2 cups of flour
1 tbsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon






Cream together shortening, sugar, and egg, blend well. Add milk alternately with dry ingredients. Next you fold in the chopped apples. Fill muffin greased or paper lined muffin pans half full.




Now for my favorite part of this recipe... the topping!!
1/3 cup of brown sugar (firmly packed)
1/3 cup of chopped nuts... (I used pecans)
1/2 tsp. of cinnamon
Mix well and spread over muffins and add apple slices to each muffin (optional).
Bake for 20 minutes at 375 degrees.
